In a large bowl, combine white beans, drained tuna, chopped red onion, chopped celery, and fresh parsley. 2. In a small bowl, whisk together lemon juice and olive oil to create the dressing. 3. Pour the dressing over the salad and toss to combine. 4. Season with salt and pepper to taste. 5. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld. 6. Serve as a protein-packed salad or on whole-grain bread as a sandwich.

Baked Sweet Potato Fries


 

Ingredients

2 medium sweet potatoes, cut into fries
1 tablespoon olive oil
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Cooking spray (optional)

Method

Preheat your oven to 425°F (220°C).

In a large bowl, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and pepper until they are evenly coated.

Spread the seasoned sweet potato fries in a single layer on a baking sheet. You can lightly grease the sheet with cooking spray to prevent sticking.

Bake for 20-25 minutes, flipping the fries halfway through, until they are golden and crispy.

Serve immediately with your favorite dipping sauce, such as yogurt-based ranch or ketchup.
